Zucchini

"There is no such thing as a diabetic diet," says Vasconcellos, the registered dietitian with the American Diabetes Association. "But filling up on vegetables is a good habit to have."

Adding a variety of vegetables to your diet is simple in the summertime.

Zucchini is a ubiquitous summer vegetable with many possibilities. It does wonderfully on the grill. Sliced thick, marinated, then turned over the flames until charred, the grill flavor complements zucchini's tender flesh.

Eat with a mixture of other grilled vegetables, and make enough to add to sandwiches or salads. Grate raw zucchini into salads, or make it the salads's main component by tossing ribbons of the raw squash with olive oil, lemon juice, and chopped fresh herbs.

Or quickly saute with tomatoes and garlic, toss with pasta, and wait for your neighbor to leave another overgrown sample from the garden on your doorstep.
