Recipe: African Spinach Dish

Ingredients:
  • 1 largeonion\cooked, chopped
  • 1 green bell pepper\cooked, chopped
  • 2 Tbs. peanut or vegetable oil
  • 1 Lbs. fresh spinach\cooked, trimmed
  • 1 tomato\cooked, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup peanut butter

Cooking Directions:
Cook onion and green pepper in oil in a skillet for about 3-5 minutes, or until tender. Add spinach and tomato. Cover and cook on low heat for about 5 minutes, or until spinach is tender. Stir in remaining ingredients. Cook until hot throughout. Serving suggestion: Server with rice or couscous.
