Recipe: Citron Risotto

Ingredients:
  • 1 mediumonion\cooked, finely chopped
  • 6 mediumbasil leaf, finely chopped
  • 2 Tbs. extra virgin olive oil
  • 1 Lbs. Arborio rice
  • 4 cup chicken stock
  • 2 lemon, juice and zest

Cooking Directions:
In a sauce pot, sauté onions until transparent. Add basil, rice, and chicken stock. Bring to a boil. Add lemon zest and juice, then remove from heat, cover, and let stand until desired thickness. Season to taste. Source: Southern Comfort Company
