Recipe: Turkey Tostados

Ingredients:
  • 8 flour tortilla
  • 1 Lbs. canned refried beans
  • 3 Tbs. chili powder
  • 1 tsp. cumin powder
  • 1 Lbs. ground turkey breast
  • 1 cup green onions, diced
  • 1 cup plum tomatoes\cooked, chopped
  • 2 cup Monterey Jack cheese, shredded
  • 1/4 cup sour cream
  • 1/4 cup green chili salsa
Cooking Directions:
Preheat oven to 425° F. Heat tortillas until they begin to turn brown, about 3-5 minutes. In a skillet, heat the beans, chili powder, and cumin powder. In a separate skillet, cook the turkey over medium heat, stirring occasionally, for about 6-8 minutes, or until meat is cooked. Mix in onions and tomatoes. Top the tortillas with equal parts bean mixture and then with the turkey mixture. Top with shredded cheese. Bake at 425° F for about 5-7 minutes, or until the cheese melts. Top each tortilla with sour cream and salsa before serving.
