Recipe: Mini Chicken Loaves

Ingredients:
  • 3/4 Lbs. ground chicken breast
  • 1 egg, beaten
  • 1 smallonion\cooked, finely chopped
  • 1 cup fresh breadcrumbs
  • 1 Tbs. grated Parmesan or Romano cheese
  • 1 Tbs. fresh parsley, finely chopped
  • salt and pepper, to taste
Cooking Directions:
Preheat oven or toaster oven to 350° F. Combine all ingredients in a bowl, mixing well. Spoon equally into a 6-cup muffin pan. Bake for 25-30 minutes, or until thoroughly cooked.
