Recipe: Toaster Oven Catfish Fillets

Cooking Time: 15 min.
 
Ingredients:
  • 20 golden round cracker, crushed
  • 1/2 cup grated Parmesan or cheddar cheese
  • 1/3 cup fresh parsley sprigs, minced
  • 1/4 cup meltedbutter or margarine
  • 4 catfish fillet
Cooking Directions:
Mix first 3 ingredients in a bowl. Brush butter on fillets; coat each fillet with the cracker mixture. Place on foil-lined baking tray. Bake at 400° F for 15-20 minutes, or until fish flakes easily with a fork.
