| Recipe: Bell Pepper and Mushroom Saute with Feta |

| Ingredients: |
- 4 tsp. unsalted butter
- 1 largered bell pepper\cooked, seeded and cut into 1-0/1 inch squares
- 1 largeyellow bell pepper\cooked, or green bell pepper, seeded and cut into 1-0/1 inch squares
- 1/2 Lbs. oyster mushrooms, or shiitake or domestic, cut in half
- 1-1/2 tsp. tarragon, or 2 Tbs. fresh, chopped
- 1/4 cup feta cheese\grated, crumbled

| Cooking Directions: |
Melt butter in a heavy nonstick skillet over medium heat. Saute bell
peppers 7-8 minutes. Stir in mushrooms, and salt and pepper to taste and
saute 4-5 minutes until mushrooms are golden. Stir in tarragon
and cook another minute. Sprinkle with feta and serve. |
