Recipe: Chili Weather Chicken

Ingredients:
  • 1/2 cup sweet & sour sauce
  • 1/4 cup orange juice
  • 1 Tbs. brown sugar
  • 2 green chili, thinly sliced (wear rubber gloves)
  • 2 Tbs. all purpose flour
  • 8 skinless chicken thigh, rinsed and patted dry
  • 1/2 tsp. salt (optional)
  • nonstick cooking spray
  • 1 clove garlic, minced
  • 1 onion\cooked, cut into wedges
Cooking Directions:
Combine first 4 ingredients in a bowl and set aside. Combine flour and salt in a shallow plate. Coat chicken with flour mixture. Coat a heavy nonstick skillet with cooking spray and heat over medium high heat. Saute chicken and garlic 1-2 minutes, until browned. Remove chicken from pan. Stir-fry onion 2 minutes. Arrange chicken in pan and pour over sweet & sour sauce mixture. Cover pan and simmer 30 minutes, or until chicken is no longer pink in center, turning chicken occasionally.
