| Recipe: Chili Weather Chicken |

| Ingredients: |
- 1/2 cup sweet & sour sauce
- 1/4 cup orange juice
- 1 Tbs. brown sugar
- 2 green chili, thinly sliced (wear rubber gloves)
- 2 Tbs. all purpose flour
- 8 skinless chicken thigh, rinsed and patted dry
- 1/2 tsp. salt (optional)
- nonstick cooking spray
- 1 clove garlic, minced
- 1 onion\cooked, cut into wedges

| Cooking Directions: |
Combine first 4 ingredients in a bowl and set aside. Combine flour and
salt in a shallow plate. Coat chicken with flour mixture. Coat a heavy
nonstick skillet with cooking spray and heat over medium high
heat. Saute chicken and garlic 1-2 minutes, until browned. Remove
chicken from pan. Stir-fry onion 2 minutes. Arrange chicken in pan and
pour over sweet & sour sauce mixture. Cover pan and simmer 30
minutes, or until chicken is no longer pink in center, turning chicken
occasionally. |
