Recipe: Cranberry Raisin Nut Bread

Ingredients:
  • 1-1/2 cups all purpose flour
  • 3/4 cup brown sugar, packed
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1 cup fresh or frozen cranberries, coarsely chopped
  • 1/2 cup golden raisins
  • 1/2 cup chopped pecans
  • 1 Tbs. orange peel, grated
  • 2 egg
  • 3/4 cup milk
  • 3 Tbs. unsalted butter, melted
  • 1 tsp. vanilla extract

Cooking Directions:
Preheat oven to 350° F. Sift together first 6 ingredients in a large bowl. Stir in next 4 ingredients. Mix remaining ingredients in another bowl until combined. Add to flour mixture and stir until just moistened. Spoon into a buttered 9-0/1 inch loaf pan. Bake 55-60 minutes or until a tester comes out clean when inserted in center. Cool in pan 15 minutes. Remove from pan and cool completely on a wire rack.
