Recipe: Broiled Pineapple with Yogurt

Ingredients:
  • 4 tsp. unsalted butter, melted
  • 1 Lbs. pineapple chunks, drained
  • 2 Tbs. chopped pecans
  • 2 Tbs. sweetened flaked coconut
  • 1/4 cup brown sugar
  • 2 cup vanilla lowfat yogurt

Cooking Directions:
Turn on broiler. Pour melted butter in a shallow baking dish. Arrange pineapple in a single layer in baking dish. Stir to coat with butter. Sprinkle with pecans, coconut and brown sugar. Broil 3-5 minutes or until sugar bubbles and begins to caramelize. Serve with yogurt.
