Recipe: Farina Pudding with Fresh Fruit

Ingredients:
  • 1 cup skim milk
  • 2 Tbs. farina, uncooked
  • 2 Tbs. honey
  • 1 largeegg, lightly beaten
  • 1/4 tsp. vanilla extract
  • 1 kiwi fruit, peeled and diced
  • 1 mango, peeled and diced
  • 6 largestrawberry, hulled and diced
  • 2 tsp. fresh lime juice
  • 2 tsp. sugar
  • plastic wrap

Cooking Directions:
Combine first 3 ingredients and a pinch of salt in a saucepan over medium high heat. Simmer 3 minutes, stirring constantly. Place eggs in a bowl. Stir about 1/4 of the farina mixture into beaten eggs. Stir egg mixture into remaining farina mixture and cook, stirring, until pudding just begins to boil. Remove pan from heat and stir in vanilla. Place pan in a bowl of ice water and stir about 5 minutes to cool. Divide between 4 small dessert bowls. Cover surface of pudding with plastic wrap to prevent a skin from forming and chill until ready to serve. Combine fruit and remaining ingredients in a bowl. Chill until ready to serve. Serve fruit over pudding.
