Recipe: Mediterranean Chicken-and-Rice Salad

Ingredients:
  • 3 Tbs. red wine vinegar
  • 4-1/2 tsp. olive oil
  • 1/4 tsp. black pepper
  • 1 clove garlic, minced
  • 3 cup cooked rice
  • 1-1/2 cups cooked chicken, diced
  • 1/2 cup bottled roasted red bell peppers, drained and diced
  • 1/4 cup medium pitted ripe olives, drained and halved
  • 1/4 cup fresh chives, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh oregano, chopped
  • 1 Lbs. artichoke hearts, drained and quartered
Cooking Directions:
Combine vinegar, olive oil, pepper and minced garlic in a small bowl. Set dressing aside. Combine rice and remaining ingredients in a large bowl and add dressing, stir until well blended.
