Recipe: Pecan Meringue Passover Cookies

Ingredients:
  • parchment paper
  • 2 egg white\cooked
  • 1 tsp. Passover vanilla extract
  • 1/8 tsp. salt
  • 2/3 cup superfine or granulated sugar
  • 1 cup pecans, chopped
  • 3/4 cup Passover chocolate chips, optional

Cooking Directions:
Preheat oven to 250° F. Cover cookie sheets with parchment paper. Beat egg whites, vanilla and salt with an electric mixer at high speed until frothy. Gradually add sugar, approximately 2 tablespoons at a time, beating well after each addition, until mixture is stiff and shiny and stands in peaks. Fold in remaining ingredients. Drop meringues by teaspoonfuls onto cookie sheets. Bake 30 minutes.
