Recipe: Apricot Nut Bars

Ingredients:
  • 1/4 cup unsalted butter
  • 2 tsp. slivered almonds
  • 2 tsp. shelled pistachios, chopped
  • 2 tsp. raw cashews, chopped
  • 1 Tbs. golden raisins
  • 3/4 cup whole wheat flour
  • 1/4 cup sugar
  • 1-1/2 cups skim milk, scalded and hot
  • 1 cup homestyle apricot spread

Cooking Directions:
Melt butter in a heavy nonstick skillet over medium low heat. Gently saute almonds, pistachios, cashews and raisins until nuts darken slightly. Stir in flour and cook 3 minutes, stirring constantly, or until flour is lightly roasted. Stir in sugar. Gradually whisk in hot milk in a thin stream. Cook 1 minute. Transfer to an oiled shallow cake pan. Press evenly into pan. Spread apricot jam over top and cool.
