| Recipe: Apricot Nut Bars |

| Ingredients: |
- 1/4 cup unsalted butter
- 2 tsp. slivered almonds
- 2 tsp. shelled pistachios, chopped
- 2 tsp. raw cashews, chopped
- 1 Tbs. golden raisins
- 3/4 cup whole wheat flour
- 1/4 cup sugar
- 1-1/2 cups skim milk, scalded and hot
- 1 cup homestyle apricot spread

| Cooking Directions: |
Melt butter in a heavy nonstick skillet over medium low heat. Gently
saute almonds, pistachios, cashews and raisins until nuts darken slightly.
Stir in flour and cook 3 minutes, stirring constantly, or until flour
is lightly roasted. Stir in sugar. Gradually whisk in hot milk in a thin
stream. Cook 1 minute. Transfer to an oiled shallow cake pan. Press
evenly into pan. Spread apricot jam over top and cool. |
