Recipe: New Potatoes with Sun Dried Tomatoes

Ingredients:
  • 1-1/4 Lbs. new potatoes, scrubbed and cut into cubes
  • 2 Tbs. unsalted butter, softened
  • 2 Tbs. cut sun-dried tomatoes
  • 1/4 cup shallots or scallions, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp. thyme, or 1 Tbs. fresh, chopped

Cooking Directions:
Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes, or until just tender. Remove from heat and drain. Melt butter in a heavy nonstick skillet over medium heat. Stir in potatoes and remaining ingredients. Saute gently until heated throughout. Season with salt and pepper to taste.
