Recipe: Almond Baked Pears
Servings: 4

Ingredients:
  • 4 ripefirm pear, peeled, halved and cored
  • 12 Amaretto or almond cookie, finely crushed
  • 1/2 cup almonds, finely ground
  • 2 Tbs. sugar
  • 1/4 cup unsalted butter
  • aluminum foil
  • 1 cup vanilla lowfat yogurt

Cooking Directions:
Preheat oven to 400° F. Cut a thin slice from rounded side of pears to keep pears from tipping. Combine cookies, almonds, sugar and butter in a bowl. Using a wooden spoon, stir and form a paste. Divide almond mixture evenly and spoon into pear halves. Arrange pears with almond side up in a baking dish with about 1/3 cup water in bottom of baking dish. Cover with foil and bake 20 minutes or until pears are tender. Serve with yogurt.
