Recipe: Almond Coconut Squares Supreme

Ingredients:
  • 1/2 cup all purpose flour
  • 4-1/2 tsp. confectioner's sugar
  • 1/4 cup unsalted butter, cut into pieces
  • 3/4 cup brown sugar, packed
  • 1 egg, lightly beaten
  • 1/2 tsp. almond extract
  • 1/4 cup flaked coconut
  • 1/3 cup blanched almonds, chopped

Cooking Directions:
Preheat oven to 325° F. Combine 1/2 cup flour with 1 Tbs. confectioner's sugar in a food processor or mixing bowl. Add butter and process until mixture resembles coarse crumbs. Press evenly in a shallow baking dish. Bake 15 minutes or until crust is golden. Using an electric mixer, combine remaining flour and remaining ingredients, except confectioner's sugar, in a mixing bowl. Spread over crust. Bake 20 minutes or until tester comes out clean when inserted in center. Remove from oven and sprinkle with remaining confectioner's sugar. Let cool before cutting into squares.
