| Recipe: Low-Fat Oatmeal Blondies |

| Ingredients: |
- 1 cup all purpose flour
- 1 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/8 tsp. ground cloves
- 1-1/2 cups quick cooking oats, uncooked
- 3/4 cup brown sugar, firmly packed
- 3/4 cup pitted dates
- 1/2 cup boiling water
- 1/4 cup unsalted butter
- 1 egg
- 2 egg white\cooked
- 1/2 tsp. vanilla extract
- 1 cup powdered sugar, sifted
- 2 Tbs. milk
- 1/2 tsp. vanilla extract

| Cooking Directions: |
Preheat oven to 375° F. Sift together first 5 ingredients in a bowl and stir in oats. In a food processor, combine brown sugar and dates. Process until dates are finely chopped. Add boiling water and butter. Process until mixture is smooth. Add egg, egg whites, and vanilla to date mixture. Process to blend. Transfer date mixture to flour mixture. Mix thoroughly by hand. Lightly butter a 9 x 13 inches baking dish. Transfer mixture to baking dish. Bake 18-20 minutes, or until tester comes out clean when inserted in center. Transfer to a wire rack to cool 5 minutes. Combine powdered sugar, milk and vanilla in a bowl. Mix thoroughly. Spread frosting over bars. Cool completely before serving. |
