Recipe: Beef Sausages with Mustard Cream

Ingredients:
  • 1/2 cup dried apricots, finely chopped
  • 1/2 cup pistachios, finely chopped
  • 4 tsp. fresh parsley, finely chopped
  • 8 thick beef sausage
  • 8 bacon slice
  • 8 wooden skewer or toothpick
  • 3/4 cup thickened cream, whipped
  • 1 tsp. Worcestershire sauce
  • 2 tsp. seeded mustard
  • 1 smallred pepper, seeded and chopped
Cooking Directions:
Preheat oven to 350° F. Combine first 3 ingredients in a bowl. Make a cut lengthways down the center of sausages and fill with fruit and nut mixture. Wrap bacon around sausages and secure with wooden skewers or toothpicks. Heat a heavy nonstick pan over medium-high heat. Cook sausages 1-2 minutes, turning until lightly browned all over. Place sausages on rack in uncovered baking dish and bake for 8-10 minutes, or until cooked. Combine last 4 ingredients and use as a topping.
