Recipe: Pink Salmon Patties

Cooking Time: 10 min.
 
Ingredients:
  • 1/2 Lbs. cannedpink salmon
  • 1-2/3 cups cooked potatoes, mashed
  • 1 egg, lightly beaten
  • 1 onion\cooked, finely chopped
  • 1/2 cup corn kernels, canned and drained, or fresh
  • 1/2 tsp. lemon zest
  • tsp. flour
  • tsp. oil
Cooking Directions:
Mix salmon and its liquid (if desired) with mashed potatoes, egg, onion, corn, and zest. Shape into 12 patties. Coat patties with plain flour and fry in hot oil until golden brown, turning as needed. Drain on paper towels and serve hot.
