| Recipe: Apple and Cottage Cheese Toast |

| Ingredients: |
- 2 Delicious apple, cored and sliced
- 1/3 cup orange juice
- 1 tsp. lemon juice
- 1/2 cup water
- 4 slice whole grain bread
- 2/3 Lbs. small curd cottage cheese
- 1-1/2 oz. hazelnuts, toasted
- 1 tsp. ground cinnamon
- 4 tsp. brown sugar

| Cooking Directions: |
Gently poach the apple slices in the orange and lemon juice and water
for about 8 minutes. Toast the bread on one side and mix together the
cottage cheese and nuts. Spread this mixture on the untoasted sides of
the bread and arrange the apple on top. Sprinkle with cinnamon and
sugar; place under hot grill until browned. |
