| Recipe: Impossible Pumpkin Pie |

| Ingredients: |
- 1 Lbs. pumpkin
- 3/4 Lbs. evaporated milk
- 2 Tbs. unsalted butter, softened
- 2 egg
- 3/4 cup sugar
- 1/2 cup buttermilk baking mix
- 2-1/2 tsp. pumpkin pie spice
- 2 tsp. vanilla extract

| Cooking Directions: |
Preheat oven to 350° F. Combine all ingredients in a bowl
and beat 1 minute in a blender on high or 2 minutes with a hand beater.
Pour into a greased 9-0/1 inch or 10-0/1 inch pie
plate. Bake 50-55 minutes, or until a knife inserted in center
comes out clean. Cool.
