Recipe: Impossible Pumpkin Pie

Ingredients:
  • 1 Lbs. pumpkin
  • 3/4 Lbs. evaporated milk
  • 2 Tbs. unsalted butter, softened
  • 2 egg
  • 3/4 cup sugar
  • 1/2 cup buttermilk baking mix
  • 2-1/2 tsp. pumpkin pie spice
  • 2 tsp. vanilla extract
Cooking Directions:
Preheat oven to 350° F. Combine all ingredients in a bowl and beat 1 minute in a blender on high or 2 minutes with a hand beater. Pour into a greased 9-0/1 inch or 10-0/1 inch pie plate. Bake 50-55 minutes, or until a knife inserted in center comes out clean. Cool.
