Recipe: Bran Muffins

Ingredients:
  • 1-1/4 cups milk
  • 2-1/2 cups bran cereal flakes
  • 1-1/2 cups buttermilk baking mix
  • 1/2 cup sugar
  • 2 Tbs. vegetable oil, or unsalted butter, melted
  • 1 egg

Cooking Directions:
Preheat oven to 400° F. Grease bottoms only of 12 medium muffin cups, or line with paper baking cups. Pour milk over cereal in a bowl. Let stand 2 minutes. Stir in remaining ingredients just until moistened. Divide batter evenly among cups. Bake 20-25 minutes, until golden brown and firm.
