Recipe: Angel's Hair Pasta with Lemon and Pine Nuts

Ingredients:
  • 2 Tbs. olive oil
  • 2 tsp. garlic cloves, minced
  • 2 Tbs. pine nuts, toasted
  • 2 Tbs. fresh lemon juice
  • 1-1/2 tsp. lemon zest
  • 1/4 cup flat leaf parsley
  • 1/4 Lbs. fresh angel's hair pasta

Cooking Directions:
Heat oil in a heavy nonstick skillet over medium high heat. Saute garlic 1-2 minutes, stirring constantly until softened. Transfer to a bowl. Add pine nuts to bowl, crushing them lightly with the back of a fork. Add next 3 ingredients and salt and pepper to taste. Cook pasta in a large pan of boiling water 2-3 minutes, or until tender. Drain and reserve 2 Tbs. cooking liquid. Toss pasta and cooking liquid with nut mixture and serve.
