Recipe: Donna's Mexican Wastebasket Stew

Ingredients:
  • 2 Tbs. vegetable oil
  • 1 onion\cooked, chopped
  • 2 celery rib, sliced
  • 2 Lbs. smoked Polish sausage, cut into 0-1/2 inch slices
  • 2 clove garlic, chopped
  • 2 Lbs. canned pinto beans, undrained
  • 1 Lbs. canned whole kernel corn, drained
  • 1 Lbs. canned green beans, drained
  • 2 cup canned Mexican style diced tomatoes, undrained
  • 2 cup canned stewed tomatoes, sliced and undrained
Cooking Directions:
Heat oil in a large nonreactive Dutch oven or stockpot over medium-high heat. Saute onion and celery 3-4 minutes until softened. Add Polish sausage and cook 2 minutes. Stir in remaining ingredients. Reduce heat to low. Cover and simmer 2 hours.
