| Recipe: Avocado and Grapefruit Salad |

| Ingredients: |
- 2 cup grapefruit segments
- 1 avocado, halved lengthwise, pitted, peeled and cut into 0-1/4 inch slices
- 1 red onion\raw, thinly sliced
- 1/8 tsp. salt (optional)
- 1/4 tsp. pepper
- 3 Tbs. lemon juice
- 1/3 Lbs. garden salad
- 8 smallblack olive, sliced
- 2 Tbs. tomato juice
- 1 tsp. ground cumin
- 1 smallclove garlic, minced
- 2 Tbs. olive oil
- 1/4 cup cilantro or parsley, chopped

| Cooking Directions: |
Combine first 5 ingredients and 2 Tbs. lemon juice in a mixing bowl. Arrange lettuce on individual
salad plates. Top with avocado grapefruit salad and sprinkle with
olives. Combine remaining ingredients, except cilantro, in a jar with
a tight-fitting lid. Shake vigorously. Add cilantro and shake again.
Pour dressing over salad and toss. |
