| Recipe: Brie, Egg and Smoked Trout Triangles |

| Ingredients: |
- 2 egg, lightly beaten
- 1-1/2 oz. butter, softened
- 2 tsp. lime rind, grated
- 6 slice white bread
- 3-1/2 oz. sliced smoked trout
- 1/3 Lbs. Brie cheese, rind removed
- 6 slice rye bread
- 1/4 cup sour cream

| Cooking Directions: |
Pour half the egg into a heated greased 20-0/1 inch omelette pan
and cook until just set. Remove omelette from pan and cool. Repeat with
remaining egg. Beat butter and rind in a bowl until combined. Spread
white bread slices with butter mixture and top with trout. Beat brie in a
bowl until smooth and spread evenly over trout. Cut omelettes to fit
bread and place on brie. Spread rye bread with cream and place, cream side down, onto omelette layer and press lightly. Cut crusts from sandwiches. Cut sandwiches into triangles. |
