Recipe: Candied Pumpkin

  • 1 Lbs. butternut pumpkin, peeled and cut in thin slices
  • 1-1/2 oz. unsalted butter
  • 8 tsp. cream
  • 4 tsp. soft brown sugar
  • 4 tsp. fresh chives, chopped

Cooking Directions:
Preheat oven to 350° F. Lay pumpkin slices overlapping in an ovenproof dish. Heat next 3 ingredients in a small pan over low heat. Stir until smooth. Pour over pumpkin. Bake 35 minutes or until pumpkin is tender. Serve sprinkled with chives.
