Recipe: Chicken Wings in Ginger Plum Sauce

Ingredients:
  • 8 tsp. peanut oil
  • 2 Lbs. chicken pieces (legs or wings)
  • 4 tsp. cornflour
  • 1/4 cup water
  • 1 clove garlic, crushed
  • 4 tsp. fresh ginger, grated
  • 3 green shallot, chopped
  • 3/4 cup plum sauce
  • 4 tsp. light soy sauce
Cooking Directions:
Heat oil in a heavy nonstick frying pan over medium high heat. Cook chicken about 15 minutes, turning until cooked through. Discard excess drippings from pan. Combine cornflour and water in a jar with a tight-fitting lid. Shake well and add to pan with remaining ingredients and wings. Bring to a boil and simmer, uncovered, 10 minutes, stirring occasionally until mixture thickens.
