- 2 cup cooked chicken breast, diced
- 1/2 cup celery\raw, sliced
- 1/2 cup mango, chopped
- 1/4 cup sliced water chestnuts
- 2 cup pineapple, diced, canned and drained or fresh
- 1 cup canned mandarin oranges, packed in their own juice and drained
- 1/4 cup light mayonnaise
- 2 Tbs. lowfat sour cream
- 1 tsp. coconut extract
