Recipe: Asparagus and Snow Pea Salad

Ingredients:
  • 1/2 Lbs. snow peas\cooked
  • 1 Lbs. asparagus spears, woody ends discarded, cut in half diagonally
  • 2 Tbs. peanut oil
  • 1 Tbs. sesame oil
  • 4-1/2 tsp. rice or red wine vinegar
  • 1/2 tsp. sugar
  • 1 Tbs. sesame seeds

Cooking Directions:
Place snow peas and asparagus in a pan of boiling water. Let stand 2 minutes, then drain and plunge into iced water. Drain well. Combine next 4 ingredients in a jar with a tight-fitting lid and shake well. Transfer asparagus and snow peas to a serving bowl. Pour dressing over and toss to combine. Place sesame seeds in a dry skillet over medium heat. Cook 1-2 minutes until lightly golden. Sprinkle over salad and serve immediately.
