Recipe: Deep Fryer Corn Fritters

Ingredients:
  • 2/3 cup vegetable oil
  • 2/3 cup vegetable oil
  • 3 largeegg
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2/3 cup all purpose flour
  • 5 tsp. baking powder
  • 1/2 cup brown sugar
  • 1/4 tsp. salt
  • 1 Lbs. corn, thawed if frozen, drained
  • 1/2 Lbs. canned creamed corn
Cooking Directions:
Combine eggs, butter and milk in a bowl and beat with an electric mixer on medium speed. Add next 4 ingredients and mix thoroughly. Beat in remaining ingredients on low speed. Heat oil in an electric deep fryer to 370° F. Gently drop large spoonfuls of batter into fryer. Do not crowd. Fry, turning occasionally, until golden on all sides. Drain on absorbent paper.
