Recipe: Almond Peach Rice Pudding

Ingredients:
  • 1/2 cup dried peaches, chopped
  • 1/4 cup Amaretto
  • 1/2 cup white rice, uncooked
  • 3 cup milk
  • 1 cup half and half
  • 2 tsp. unsalted butter
  • 1/4 cup sugar
  • 2 egg, beaten
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. nutmeg

Cooking Directions:
Combine peaches and Amaretto in a bowl and soak 10 minutes. Set aside. Combine next 5 ingredients in a saucepan over medium high heat. Bring to a boil. Immediately reduce heat to low, and simmer 15-20 minutes, stirring constantly, or until rice has absorbed the liquid but mixture is creamy. Add peaches with their soaking liquid and cook 1 minute. Remove from heat and allow to cool slightly. Whisk in eggs. Return to the heat and cook about 5 minutes until mixture is creamy. Serve sprinkled with cinnamon and nutmeg.
