| Recipe: Almond Peach Rice Pudding |

| Ingredients: |
- 1/2 cup dried peaches, chopped
- 1/4 cup Amaretto
- 1/2 cup white rice, uncooked
- 3 cup milk
- 1 cup half and half
- 2 tsp. unsalted butter
- 1/4 cup sugar
- 2 egg, beaten
- 1/8 tsp. ground cinnamon
- 1/8 tsp. nutmeg

| Cooking Directions: |
Combine peaches and Amaretto in a bowl and soak 10
minutes. Set aside. Combine next 5 ingredients in a saucepan over
medium high heat. Bring to a boil. Immediately reduce heat to low,
and simmer 15-20 minutes, stirring constantly, or until rice
has absorbed the liquid but mixture is creamy. Add peaches with
their soaking liquid and cook 1 minute. Remove from heat and allow to cool
slightly. Whisk in eggs. Return to the heat and cook about 5 minutes
until mixture is creamy. Serve sprinkled with cinnamon and nutmeg. |
