This summer, my favorite chocolate mint grew beautifully and I was planning to try this great new melon and mint sauce recipe I found on Nubella.com. It was a gorgeous gardening Saturday morning and I was harvesting the last of my cabbage, tomatoes, peppers, and onions. I moved on to cleaning up my herb bed, pulling out the last of my basil and was on the final cleanup at my bounty of chocolate mint when I felt the most awful piercing pain on the top of my left hand. To my dismay, I had disturbed a nest of yellow jackets and the bees weren’t happy. One decided I was an enemy and five stings later, I screamed bloody murder and ran for my life. My family came to my rescue with after-bite ointment and tender loving care, but they did think I’d overreacted a bit. Comments (1) |

Today was one of those days! Work was busier than usual and my evening “to do” list was full to overflowing. On the way home an accident blocked the freeway and a detour took us right by one of our favorite Italian restaurants. Rather than spending wasted time in the traffic jam, my husband and I decided to make a pit stop and enjoy a relaxing meal while waiting for the road to clear. Now that’s what I call making the best of a bad situation! Since I’m half-Italian, Italian food is pleasing to my palate any time and real comfort food. On the chilly Saturday afternoon of my 30-year high school reunion, this recipe warmed everyone up and left us craving more. It’s a great fall/winter vegetarian recipe and an excellent source of beneficial phytochemicals such as beta carotene as well as vitamin A. Dear friend, fellow classmate and phenomenal cook, Donna, was willing to share this hearty recipe, which was paired with whole-grain bread.
