ImageYears ago, someone gave me the following recipe for brownies made with black beans and wheat germ instead of the water, oil, and eggs found in many boxed brownie recipes.  I don’t know the original source of the recipe, but I’ve had lots of fun with it over the years.  Thanks to the recipe creator who I’d love to give due credit.

First of all, they’re easy to make, moist, tasty and a source of fiber.  I’ve taken them to health fairs and college classes and had people try to guess the secret ingredients.  They never could.  Now that sneaking healthy ingredients into traditional recipes has become more common, perhaps someone would guess correctly now.

ImageWith 2008 right around the corner, now is an exciting time of new beginnings. Clean calendars in a fresh year help us remember that every day is a new day. Many people make New Year’s resolutions with high hopes of changing their behavior for the better. 

I like to establish goals for the New Year. Writing goals down helps to solidify them and create a plan to accomplish them. Now’s a great time to come apart from our everyday busy lives and write our goals for 2008. We are more likely to accomplish goals when we write them down.

Consider adding these healthy eating goals to your list for 2008:

ImagePreviously, I posted one of my mom’s favorite cookie recipes, Cocoa Meringues (see Yummy Cookies) and Natty13 wrote and asked for a recipe for peanut butter meringues. I found one for you, Natty.

I’ve also included one for Mint Chocolate Chip Meringues that my family and friends also enjoy. Meringues are fun and easy to make and they’re light, delicious, and low-calorie. Hope you enjoy these recipes.
