“Balance” = state of equilibrium; mental or emotional stability; the pleasing harmony of various elements.

“Balanced Eating” = path to enter the state of equilibrium of mental, emotional and physical stability through the pleasing harmony of eating a healthy diet rich in variety and full of flavor.

Welcome to my “Balanced Eating” blog. Let me admit right away, I haven’t always been a balanced eater. I grew up eating a typical American diet with an emphasis on Italian and Filipino foods, which are part of my heritage. I ate some great food and meals were always special. I’ve always been an adventurous eater and have loved trying new and tasty treats.

But along with my joy of eating came a family history of obesity, high cholesterol, high blood pressure, heart disease, and diabetes. That motivated me to study nutrition in college in an effort to appreciate the foods I love while staying healthy and preventing the ills that were in my genetics. Now, 22 years later, I’m still appreciative for that choice. I’ve learned balanced eating is a worthwhile and satisfying process.

When I first began to study nutrition, I was a food fanatic. I really went to an extreme with rules that made eating both time consuming and difficult. Over the years, I’ve learned the value of balance and moderation in my personal and professional approach. And, now more than ever, healthy food sources are more accessible for almost everyone making it much more convenient for my readers to find better food choices. 

For me, balanced eating means choosing a variety of healthy foods and drinks every day, enjoying less nutritious treats in moderation, and combining this balanced eating with rational healthy exercise.

I hope you enjoy visiting and participating on this blog as I share and respond with my thoughts, tips, food reviews, recipes and insights into living the balanced eating life.

Thanks to you, I have learned how to properly balance my diet day in and day out. I love to eat. Being able to enjoy such a variety of foods and balance them into a healthy lifestyle has been a huge part of my life.

Thanks to great guideance from Theresa I lost 20 pounds and have been able to keep it off. She helped me find a balanced diet that I can enjoy. That coupled with daily exercise has made the difference that I needed.

Where's the Beef ???
Four of my closest friends are organizing a camping trip and we're planning to cook a 20 pound prime rib roast (unsalted) over the fire. 
After removing some of the fat, er, I mean ALL of the fat, would you suggest cooking the $250.00 roast over 500 degree coals for 30 minutes, 45 minutes, or 14 hours?

Todd cooking over open fire vs. coals can be deceptive because some wood burns hotter than others. Pithy peach makes lousy heat and just turns to ash rather than a nice bed of coals. On the other hand Oak can make a fire so hot that your roast might cook much faster if you don't watch a meat thermometer. I assume you wrap the whole roast well in foil, so it's very hard to judge internal progress without the probe. Nothing better than experience to teach this valuable lesson! Choose your wood, coals, and rack to get that 500 degree range and you should have a campfire delicasy. Get it too hot and the result could be a dried up 20 lb piece of jerky.
