Page 1 of 2 Zucchini, Lima Beans and Pea Soup Try this terrific summertime soup to make great use of an abundance of zucchini and boost fiber intake with added legumes (lima beans and peas).
3 cups chopped zucchini 2 medium onions, chopped 1 tablespoon olive oil 6 cups chicken broth (low fat and low sodium canned broth ok) 1 (10-ounce) package frozen lime beans ½ (10-ounce) package frozen peas Salt and pepper to taste Sauté the zucchini and onions in the olive oil in a large saucepan for about 10 minutes. Stir in the broth. Bring to a boil. Stir in the lima beans and peas. Reduce the heat. Simmer for 25 minutes, stirring occasionally. Process the soup in a blender, food processor or use an immersion blender to puree. If using blender or food processor, return to saucepan. Season with salt and pepper to taste. Simmer just until heated through, stirring frequently. Ladle into soup bowls. Serves 8 Nutrients per serving: Calories 122; Protein 8 grams; Carbs 16 grams.; Fat 3 grams.; Fiber 4 grams.
