For a refreshing way to help fight infection and boost immunity, try this vitamin c-breeze – named for its excellent vitamin C content. It’s easy to prepare and each delicious serving delivers 230 percent of the RDA for vitamin C, along with 80 percent of the RDA for vitamin A. This recipe is taken from the book Super Smoothies, by Mary Corpening Barber and Sara Corpening Whiteford. Kiwi smoothies are best made in a food processor instead of a blender, because in a processor, the tiny seeds stay whole, but if they are blended, the seeds give the drink an unpleasant bitter taste.
Combine the following ingredients in a food processor: 1 cup diced kiwi (about 3), chilled
1 cup orange sherbet
1-¾ cups diced cantaloupe, chilled Process until smooth. Makes 2 servings. Vitamin C and vitamin A play many roles in the body besides helping to boost immunity. Vitamin C also helps promote healthy gums and teeth, aids in iron absorption, helps with wound healing, and helps to prevent heart disease and cancer.
