ImageYears ago, someone gave me the following recipe for brownies made with black beans and wheat germ instead of the water, oil, and eggs found in many boxed brownie recipes.  I don’t know the original source of the recipe, but I’ve had lots of fun with it over the years.  Thanks to the recipe creator who I’d love to give due credit.

First of all, they’re easy to make, moist, tasty and a source of fiber.  I’ve taken them to health fairs and college classes and had people try to guess the secret ingredients.  They never could.  Now that sneaking healthy ingredients into traditional recipes has become more common, perhaps someone would guess correctly now.

Anyway, it’s a fun experiment.   I hope you enjoy this recipe. 

Black Bean Brownies

1 regular size box brownie mix
1 can black beans (15.5 ounces)     Do not drain!
¼ cup wheat germ

Process the black beans in food processor or blender until smooth.  In a mixing bowl, combine the black beans, brownie mix and wheat germ.  (Remember – do NOT add water or oil or eggs found on the box directions).  Mix well.  Bake brownies according to the brownie mix directions on the box.  You may add chopped nuts if desired.
