The Dietary Guidelines for Americans recommend 2 cups of fruit and 2 ½ cups of vegetables every day for those eating 2000 calories. This number decreases or increases if you’re eating less or more calories, with the range being 1 – 2 1/2 cups for fruit and 1 – 4 cups for vegetables. And the research is in: diets high in fruits and vegetables offer much protection against diseases such as cancer, heart disease and hypertension. Fruits and veggies are almost all low in fat and calories and sodium and are great sources of vitamins, minerals, phytochemicals and fiber. Most Americans don’t get enough fiber and consequently, many have problems with constipation and overeating. Why not consider planting your own garden this year. All you need is some dirt, seeds or plants, water and sunshine. There are lots of great resources about gardening and you can garden in a pot on a patio or in a raised bed in your backyard or just in a plot of dirt. My husband and I began gardening in raised beds 16 years ago and have found this to be a great way to raise flowers, herbs and veggies. So far, I’ve planted onions and lettuce our perennial chives are growing beautifully. Gardening reduces stress while providing a great form of exercise with healthy dividends.
