Too hot to cook? Then check out the winning recipe from the Nubella No Cook Recipe Contest. It’s perfect for a steamy summer day. Thanks to everyone who entered; we received many delectable recipes.
Our favorite comes from Bree Thurman of Tempe, Arizona. Bree’s Healthy Crab Salad is low in fat and calories and high in protein. A great-tasting alternative to other seafood staples, crab meat can be found at some supermarkets and wholesale stores for a low price, “making crab a luxury that we can all enjoy,” says Bree.
The Winning Recipe: Bree's Healthy Crab Salad 1 pound lump crab meat 1 shallot, minced 1 stalk celery, chopped 2 tablespoons plain low-fat yogurt 2 to 3 tablespoons mustard 2 teaspoons Worcestershire sauce 1 teaspoon hot sauce (or more if you like it spicy) The juice of 1 lemon 1 handful of Italian parsley, chopped 1 diced avocado (optional, but recommended) Sea salt and pepper to taste
Put the crab meat in a bowl. Add the remaining ingredients, and mix well.
Enjoy straight out of the bowl or as a sandwich. It can also be rolled up in a lettuce leaf or stuffed in a hollowed-out bell pepper. |
