If results for the recent Nubella poll are any indication, the restaurant industry is in trouble: more than half of the respondents to the online survey said they ate out fewer times this year. Slightly more than a fourth said they patronized restaurants more frequently in 2006. Slightly more than a fifth said they ate out just as much this year as in previous years.

     Endive and Grapefruit Salad

    What a better way to bolster your vitamin C than combining leafy, green endive with tangy grapefruit for a tasty, healthy salad. This creation is low in saturated fat and cholesterol, but also packed with vitamin E, magnesium, phosphorus, thiamin and at least 12 other things that are good for you.

    Vitamin C

    Water-soluble vitamin C is neither made by humans nor stored for long in our systems. Vitamin C moves quickly through our bloodstreams and is excreted through urine.

    For this reason, we need to constantly replenish our vitamin C supply by eating foods rich in the nutrient, such as citrus fruits, strawberries, broccoli, peppers and spinach.

    Supplements and multivitamins can also increase intake, but there's no need to overload on this well-known antioxidant, as recommended daily intake varies from person to person. For example, smokers need more vitamin C than non-smokers.

    Vitamin C protects cells from free radical damage and helps strengthen weakened immune systems. It also helps increase iron absorption and bioavailability.

    For example, if you add grapefruit slices to your spinach salad, the vitamin C will help release the iron from the spinach for the body to use.

    Grapefruit

    A member of the citrus family with a strong nutritional profile. High in vitamin C, one-half grapefruit includes 70 percent of the daily recommended allowance of this valuable vitamin.

    Grapefruit's sweet, tart, and sour qualities come from various phytochemicals that also act as cancer-fighters in the body. Winter is citrus season, and these fruits are usually lower in price and higher in quality this time of year.

    Try them at breakfast or as a mid-morning snack, or combine grapefruit segments with avocado and spinach for a delightful winter salad.

    Nubella Health Bite

    You hear about cutting as much fat as possible out of our diets, but how much is too much? To lose weight, health experts recommend limiting 20 percent of calories from fat. Figure your daily limit of fat in grams, then track your intake by reading nutrition labels on food packages, analyzing your recipes and even buying a "fat counter" in a bookstore. Aim for "healthier" monounsaturated fat as found in olive and canola oils. Limit your intake of saturated fat and "partially hydrogenated fat" - better known as "trans fat" - as much as possible.

    As a city girl, my most unusual holiday invitation from my friends took me to Wisconsin to stay with Betty, one of my junior counselors, on her family's dairy farm, where we cut down a Christmas tree and dragged it home.
